The source of water in my boot was the rubber flappy "one way" air valves fitted on each side, near tail lights behind bumper. Google says it is a common problem.

I managed to squirt sealant along the top edge of each valve without having to remove bumper. That stopped water collecting in boot.

I might give this a try, was this just below the rear lights? I'm assuming it will be obvious if I remove them?

Yes. Remove the lights and the top edge of the rubber thingy is visible.

Unfortunately not I more or less gave up. I attempted the fix @Doily suggested but there was still water pooling in the boot. I am also wondering currently if there are other problems occuring as there is what I believe to be an abnormal amount of misting considering the amount of water.

 

Not a fix at all but I'm just trying not to drive the car when it's particularly cold or wet...

I drilled a small hole through the plug nearest the front of the spare wheel well (furthest from you as you stand at the hatch). I have had no more problems with water gathering or condensation.

I do have a couple of large bags of silica gel I keep in the car but I have had them in every car for several years now. After all, you are regularly getting in with wet shoes and clothing.
