It might well be more about the manufacturer meeting Average Fleet emissions which they need to and the WLTP / RDE2 results but it is easy enough if you do the same trips regularly and throughout the year in the different seasons and road conditions to drive with Coasting Functioning and others times without and see if you use less fuel. That becomes more difficult when it is a car with ACT/ COD and not just a 4 cylinder engine where ECO/ Coasting is about the DSG disengaging.

Just presuming that you are remapping to improve the performance by increasing the bhp / Nm there is little point running 95 ron Unleaded E10. E5 in the UK is 97 or 99 ron minimum and it would be usual for the remap to be written to suit running Super Unleaded. Sainsbury,s Super Unleaded is 97 ron minimum.

Re PS/BHP/kW & Nm. You are paying for what you get and the Max PS/BHP/kW & Nm in the UK is not the max, it is the Minimum you should get. You are not going above 3,000 ft above sea level in the UK, Ambient temps not more than 40*oC and not colder than -30*oC & the fuel is as it should be Petrol e5 or e10 or diesel. (Not true with BEV,s though as if the Temperature / Battery is cold in ambient temps only as low as -5*oC then power can be reduced until the battery is up to a good temp.) As to official VW Group Figures, 0-60 or 0-62 mph, top speed etc. They often lie. A VW or Audi with the same engine, gearbox as a SEAT or Skoda and the same power can be shown as better performing. They do not like CHEAPER cars looking as better performing. (EDIT> Even if the VW or Audi is heavier than the Skoda / Seat. Has it had 3 oil changes and has is been far enough that new spark plugs have been replaced. The DQ400-e DSG is due an oil change at 64,000 km. Is the Air Filter clean / fresh / dry?

If the DSG changes gear perfectly then that is what you want. Only have the place service it if they know their stuff, otherwise get the cost of that off the purchase and have it done by a place that does. Does the 2016 TDI have SCR (AdBlue)? if not then maybe for the better.
