are you supposed to check / top up oil between services?

I'm not against main dealer servicing, but unlike the guy in the video I'm not against responsible DIY servicing either.

 

The dipstick can become difficult to remove if the oil pressure inside the engine is high. It can cause a vacuum requiring a good pull of the dipstick to get it to budge.

 

Try unscrewing the oil filler cap to release the pressure, this should make it easier to remove the dipstick.

so the fact that it didn't pull out is actually a good sign? lol. car is 5000 miles post last service. I tried checking it today before I left the house.

 

(I haven't watched that video, it was 15 mins so I Didn't click on it..)

It isn't necessarily a good sign, but I wouldn't worry, it's unlikely to be a bad sign.

 

Mine requires a significant yank to release it sometimes. Don't be afraid to pull pretty hard, just make sure you pull it upwards (towards the bonnet) without twisting or bending it.
