What would it take to shove a 3.0 L V6 TDI or a 4.0/4.2L V8 TDI Audi engine into a Superb?

Probably cheaper to buy a large diesel engine still in an Audi.:)

You might be lucky with the 3L V6, as the previous model had a 2.8l V6 fitted. It would be very tight and you have got nicer big bocks in Australia.

Superb 1 has a completely different platform compared to the mk2. Longitudinal (rather than transverse) engine mounting which was designed to accommodate the Audi V8 engines for the A6. The engine bay in the mk2 started life in the Golf mk5 and is a good deal smaller.
