Lift rear seat base?

Does the rear seat base on the hatchback lift up, so that the rear seat back can fold flat, like in the MK2 FL?

No it doesn't I'm afraid. It can be removed but is a PITA to refit as the grommets holding the front of the bench are not the best design in the world and wear / break.

Is it the same on the hatch and estate?

 

I read that it can't be done easily on the Seat Leon (see attached image). 

Can it be done on the VW Golf Estate or is it the same on all MQB cars of this size?

I've not taken the bench seat out of my Leon. However, the diagram for the front of the bench seat on the Octavia is the same; not visible on the instructions is at the rear left and right hand sides of the chassis there are hooks that retain the back of the bench seat. Once you have released the front of the bench you can slide your hand underneath to feel the locations of the hooks.

I would assume that the bench seat for the hatch and the estate would be the same.
