Increasing wheel Overall Diameter by 4.9%
225/35R20 will give a hard ride and won't protect the rims very well from pothole damage. My preference would be 235/40R20. 235/40 fitted to 7.5J rims isn't an ETRTO approved combination, although some Octavia MK3 vRS owners are successfully running even lower profile 235/35 tyres on 7.5J rims. Michelin Pilot Sport 4S PS4S 235/40R20 96Y XL https://www.camskill.co.uk/m63b0s11827p167799/Michelin_Tyres_Car_Michelin_Pilot_Sport_4S_PS4S_-_235_40_R20_(96Y)_XL_TL_Fuel_Eff_%3A_C_Wet_Grip%3A_A_NoiseClass%3A_2_Noise%3A_71dB 235/40R20 has a 3.8% bigger outside diameter compared to 235/40R19. 235/40R20 would better protect the rims from kerbing damage compared to 225/35R20, when either are fitted to 7.5J rims. The load index of 225/35R20 XL (eXtra Load) tyres is only 90 (600kg) and that's not enough for the Superb MK3.

Increasing wheel Overall Diameter by 4.9%
215/45R20 on 7.5Jx20 ET40 rims should give better cornering than the standard 215/55R17 size and less drag than the standard 235/45R18 size, but don't forget to use 3psi more tyre pressure than when using 215/55R17 tyres due to the lower load index of 215/45R20 tyres compared to 215/55R17 tyres. Michelin Pilot 4S PS4S in size 215/45R20 95Y XL https://www.camskill.co.uk/m63b0s9268p196556/Michelin_Tyres_Car_Michelin_Pilot_Sport_4S_PS4S_-_215_45_R20_(95Y)_XL_TL_Fuel_Eff_%3A_C_Wet_Grip%3A_A_NoiseClass%3A_2_Noise%3A_71dB If you're using BMW i8 rims, you will need 57.1mm to 66.5mm spigots to centre the rims on the hubs and probably conical wheel bolts like the BMW normally uses. Don't use the BMW i8 wheel bolts because the BMW i8 uses a M14x1.25mm thread. You will need to use wheel bolts with the Superb MK3's M14x1.5mm thread, ie. the thread's pitch is different. Where do I get a new jack (at a fair price) for my octavia
Spare Wheel Replacement Kit for Octavia MK3 https://eshop.skoda-auto.cz/cs_CZ/sady-pro-vymenu-kol/c/setsToChangeWheels?q=%3AscoreDesc%3AcarType%3AOctavia%2BIII%2B%282017%2B%29&text=# As you can see from the link above, genuine Skoda OEM spare wheel replacement kits are not expensive at 1025CZK which is about £34. They might not be much more from a UK Skoda dealer. Just add spare wheel to complete the package.

Trolley jacks. I'd welcome a bit of advice, please.
VW group cars use ball (radius) seats, not tapered (conical) seats. Lug nuts (or bolts) will have either flat, tapered (conical), or ball (radius) seats. https://en.wikipedia.org/wiki/Wheel_sizing Photo of Ball (Radius) Seat Wheel Bolt https://www.ebay.co.uk/itm/Ford-Galaxy-Wheel-Bolt-M14x1-5-Radius-Seat-28mm-Thread-Length/283018069378?hash=item41e5310582%3Ag%3A-6UAAOxy1VlRE7Qw&LH_ItemCondition=3 Photo of Tapered (Conical) Wheel Bolt https://www.ebay.co.uk/itm/1-X-M14X1-5-SHORT-HEAD-SPACER-ALLOY-WHEEL-BOLTS-FITS-A3-S3-A4-S4-B7-AVANTI/322352405911?hash=item4b0db35d97%3Ag%3AUAEAAOSwEzxYSCNt&LH_ItemCondition=3

Spare wheel
Actual width always depends on the width of the rim that the tyre is fitted to. Take a look at Toyo's 16" tyres in the link below. https://www.toyo.co.uk/tire/pattern/proxes-cf2 Toyo's 215/60R16 measures 221mm in width when fitted to the nominal 6.5J rim. Toyo's 215/55R16 measures 226mm in width when fitted to the nominal 7J rim. Toyo's 215/45R16 measures 213mm in width when fitted to the nominal 7J rim.

Spare wheel
215/60R16 will be narrower if fitted to a 6J rim rather than the standard 6.5J rim. https://www.oponeo.pl/felga-stalowa/alcar-kfz-9490#20242538 215/60R16 fitted to a 6J rim will probably be more than 10mm narrower than a 215/55R17 fitted to the standard 7J rim.

Did Skoda fit the wrong tyres on the Skoda Rapid? I'm thinking about sizing up (also 15 to 16 wheels)
Audi 8L0601025D and 8L0601025E 6Jx15 ET38 5/100 57.1 alloy rims weigh about 5.5kg each. These were made in Germany from forged alloy, so are much lighter than the typical heavy sand cast alloy rims. http://www.oemepc.com/audi/part_single/catalog/au/markt/RDW/modell/A3/year/2000/drive_standart/201/hg_ug/601/subcategory/601050/part_id/254951/lang/e 185/65R15 and 195/60R15 are both common and cheap sizes. For comfort and looks maybe go for 195/60R15 on 5.5Jx15 ET40 5/100 57.1 Alcar 4055 steel rims. They have an attractive 18-hole design. 195/60R15 are readily available in both H and V speed ratings.

Alaris rims 18" weight
"eshop skoda cz" lists many of the OEM Skoda alloy rims. However, they don't give a weight for the Alaris, Golus, Pictoris, or Turini 18" alloy rims. Where weights are given for 18" alloy rims for the Octavia MK3, these are between 11.3kg and 13.5kg. Alaris ??.?kg Braga 13.1kg Gemini 12.2kg Golus ??.?kg Pictoris ??.?kg Trinity 13.5kg Turbine 12.2kg Turini ??.?kg Vega 11.3kg https://eshop.skoda-auto.cz/cs_CZ/hlinikove-disky/c/alloyWheels?q=%3AscoreDesc%3AcarType%3AOctavia%2BIII%2B%282012-2017%29%3AcarType%3AOctavia%2BIII%2B%282017%2B%29&page=0

Replacing 17 inch with 16 inch wheel s
There are two standard specifications for the 16" rims on the Superb MK2s. 6Jx16 ET50 7Jx16 ET45 6Jx16 ET50 rims will give a more comfortable ride compared to the wider 7Jx16 ET45 rims, when fitted with 205/55R16 tyres. Check what is stamped on your spare rim. It will probably be the narrower 6Jx16 ET50 size. You might need a magnifying glass as the markings are quite small. The stamped markings are near where the 5 wheel bolt holes are. mytyres.co.uk are listing both sizes of 16" steel rims for about £40 each. If you want a recommendation for tyres, I would suggest a good quality all-season tyre in size 205/55R16 91V. The V-speed rating is needed because the 170HP Superb MK2 can go over 130mph. I would go for the 91 load index and not the XL (eXtra Load) 94 load index, because the XL can have slightly stiffer sidewalls, which could make the ride slightly harder. Goodyear Vector 4 Seasons Gen-3 and Vredestein Quatrac are both available in the 205/55R16 91V specification.

19" wheels - too hard?
Are you talking about Superb MK3 235/40R19 tyres, or lower sidewall height tyres such as 225/35R19 that might be fitted to Octavia MK2 to MK3? The sidewall height of 235/40R19 tyres is 94mm. The sidewall height of 225/35R19 tyres is 78.75mm. Therefore 235/40R19 tyres have a sidewall height that is almost 20% higher than the very low profile 225/35R19 tyres. Another example: The sidewall height of 245/45R18 tyres is 110.25mm. This sidewall height is a massive 40% more than the very low profile 225/35R19 tyres. I would go for slightly oversize 245/45R18 tyres on the Superb MK3 fitted to standard 8J wide rims. Compared to the standard 19" tyres, you've gone up 10mm in width and 5% in aspect ratio. On the UK's badly potholed roads, it really seems a bit pointless not giving yourself a decent amount of sidewall. The outside diameter of 235/40R19 tyres is 670.6mm, and the outside diameter of 245/45R18 tyres is 677.7mm. So 245/45R18 tyres have an outside diameter of about 1% more than 235/40R19 tyres. An outside diameter of up to 1.5% more is often considered a small and acceptable difference. The load index of 245/45R18 tyres is 710kg @ 44psi, and the load index of 235/40R19 tyres is 630kg @ 44psi. So you can drop your tyre pressures by 3psi to 4psi when changing from 235/40R19 tyres to the higher load index 245/45R18 tyres.

Aftermarket "Skoda Style" alloys - any experience of these?
205/55R16 on 6Jx16 ET48 rims would give a nice ride. I wouldn't say the same for 225/40R18, although I guess anything is an improvement on 225/35R19. Greenline 1.6tdi ride quality impressions
So the 1.2TSi 77kW/105HP engine with 155mm of ground clearance can be fitted with 195/65R15 tyres. There's no mention of the 1.2TSi 81kW/110HP engine which replaced the 77kW/105HP engine in 2015. Presumably, that can also be fitted with 195/65R15 tyres. 195/65R15 would give similar ride comfort to 215/60R16, but is a much cheaper size.

In some European countries you can only fit tyre and rim sizes that are in the Certificate of Conformity. However, as it came out the factory that way, I would imagine it is in the Certificate of Conformity.

Dampers
According to autodoc, 22-131614 is for standard suspension and 22-139191 is for sports suspension. I would go with the 22-131614 because the Skoda sports suspension is only a 15mm drop from standard. Also, the Bilstein B4 rear shock absorbers are often only available for standard suspension (although Bilstein will say that it's also suitable for sports suspension). So I agree with the advice that you got from Bilstein. There are two diameters of front shock absorbers on the Octavia MK2, 50mm and 55mm. Make sure that the outside diameter of your current struts is 55mm.

6V0601025A and 6V0601025L are a similar design but there are some significant cosmetic differences. 6V0601025A is made in Turkey, and I would guess 6V0601025L is also made in Turkey. Polo GTI front suspension spring
Kilen 25127 and Lesjofors 4095141 are identical to each other as they are the same springs, made in the same factory in Sweden...just marketed under two different brand names. In the UK, Kilen are more widely available than the identical Lesjofors version...and usually cheaper. It's usually said that springs should be replaced in pairs. Garages often just replace one spring if it's under warranty. If it's the same specification of spring and the ride height is the same both sides, you won't have a problem with the car's handling. However, I always change both sides at the same time as the other side might break soon.
