Sat-Nav Maps Latest Version?
Oh yes it will... ... guess how I know.

Used vehicle - Missing parts
Yes, I had one of those in the car when I bought it at 6 months old from a main Dealer. It's an SE-L First Edition which also includes the variable floor. After a few days I found the rail was always in the way so took out of the car and stored.

regenerative braking and brake lights
They did on a loan car (Octavia mk4 e-TEC) I had a while back so I assume they would on an iV too. Easy enough to check on an unlit road, especially if you get a passenger to look out of the back they'd see the road light up red.

Crackle from info screen or ceiling box
The crackling sound is most likely the SOS module; many of us with 2020/21 build cars have needed replacement units to solve it. It’s a known [to Škoda] issue. Choice of service workshop is a personal thing. If you have any form of warranty then ensure you comply with the terms. Otherwise I would expect any good VAG specialist workshop would have all the s/ware gizmos needed. Personally I like the built in satnav but many on here prefer to use Waze, Apple Maps, or whatever on the smartphone via CarPlay or Android Auto. Map updates can be downloaded to a USB-C stick and installation is whilst driving around. Several threads on here so have a search. Or take a look here: https://www.briskoda.net/forums/topic/531909-sat-nav-maps-latest-version/#comment-5957491 On the street wheel there are chromed rollers/buttons. Click the right side one and you can access the settings to change what is displayed in the centre of the two dials. Scroll up/down and/or use the left/right buttons under the scroll wheel. Click to select the option wanted. It’s not that intuitive but you’ll soon get the hang of it.

No driving modes
Alas I have no idea, sorry. Having said that, I’d be surprised if it can’t be done.

Adjusting UK headlights for driving in continentaal europe
Only with matrix headlights can you adjust for mainland Europe. The stickers work well - if they are located correctly. That sounds an obvious statement (which it is) but the placement is absolutely critical; I fitted some and they were totally ineffective; moved them no more than 2mm and bingo! Absolutely fine. Unlike the days of old fashioned headlights there is no nice lines on the glass so it is trying to line them up with the internal components. A pain in the wotsit! Nowadays I just set the beam to a lower angle to avoid dazzling in coming traffic. Not had an issue even with a heavily laden boot (but have a set of deflectors in the car just in case).

P0299
I’ve no knowledge of the error codes but a while back my 2020 build car had a software update for the AC - presumably there was some kind of issue early on.

No driving modes
Based on my (UK, pre-facelift mk4) experience, if the car does not have the drive modes button, then neither is it in the menus. Only the mid and high specification models have drive mode selection so SE-L (and SE-L First Edition), vRS; maybe SE Technology do; SE and SE First Edition did not.

OTA of System Update not working - TPI?
I'm not entirely sure what the production date for mine is, always assumed it was 'summer' 2020 given that it was registered in September 2020. The other day, as a result of a subject access request to the Škoda Data Manager, I got a .json file about the car. Despite spending 20 years working in IT [infrastructure] I don't 'speak' .json, but a bunch of dates in there suggest a build in early July 2020 - see screenshot On the edge of the date OTA non-availability window mentioned by @inspectorman

See below... @SiWaiting I have Columbus Agree. For my car... Online manual instructions/conditions to enable OTA set : Yes OTA shown as available for my VIN in my country : Yes (screenshot below) - the only difference that I can see from @JamesK car Hardware Version: H56 Device part number: 5E3035816H Current Infotainment version: 1941 OTA Updates currently being received for: Infotainment: No Maps: Yes Apps: Yes

OTA of System Update not working - TPI?
@JamesK seems we are in the same [Škoda] boat 😉 I'm taking mine in for MOT early next month so will ask the team there is they have any ideas though to be honest I've worked around it for 4 years so not sure how much motivation I have to push hard for a resolution. @Lowepepsi2004 can you send a destination to your car as well as routes? I'm thinking its easier to sit on the sofa with the app finding a list of road trip stopovers, for example, and then send each to the car where they would hopefully show up as favourites or recent destinations.

OTA of System Update not working - TPI?
Bizarrely mine has a higher part number and is a 2020 build yet no OTA updates and can't upload a route form the app to the car.

OTA of System Update not working - TPI?
Its H56

OTA of System Update not working - TPI?
Yep, we know that is how it is supposed to work, but with older cars like mine and @JamesK it's not available. In my app the "arrow pointing down" to a car doesn't exist. All I get is the usual Apple share icon which allows me to send the route to Apple Maps or Waze. Very disappointing! Anyway, back to OTA system updates, mine doesn't get them, only the maps and minor apps. The early cars are limited in the capability of the infotainment system, even compared to the published information in the brochure available at the time.

Low Battery on 1.5tsi act manual
It's all to easy to be skeptical/synical of Škoda Assist service claims so it's good to hear that they were so good/efficient. Thanks for the update.

Mystery options in instrument display
It's available on later builds of the pre-FL Mk4; how late I don't know - only that my 2020 build doesn't have the option for it, yet a loan 2023 could. In that car it is accessed by clicking the right side roller on the steering wheel - same way as customising what's shown inside the dials. I assume it's the new hardware/firmware of the virtual cockpit in more recent cars.

Camping...
Could get a faraday pouch for the key. Plenty of options on the likes of Amazon. I got a couple of these... https://www.amazon.co.uk/dp/B08FT6YCQZ?ref_=ppx_hzsearch_conn_dt_b_fed_asin_title_1&th=1 My previous ones lasted couple of years before cracks in the fabric let the signal seep through.

Octy Mk4 stalling in traffic - MAJOR safety issue
@chelon The Drive Mode selection covers Driving Dynamics, Steering, Drive, ACC and Air Conditioning. In 'Normal' mode, they are all set as Normal (no surprises there then!). In 'Individual' mode they can be tweaked; this is what I use and some rationale... Driving Dynamics: Sport. Even though my does not have the Dynamic Chassis Control option, I feel that the suspension is a little less bouncy of some poorly repaired local roads use regularly. Maybe this is my imagination, maybe it isn't! But somehow it feels that little bit better. Steering: Normal. The other option is 'Sport' which makes the steering a bit sharper and heavier - too much so for my liking for everyday driving. Drive: Normal. Other options are 'Sport' and 'Eco'. Sport has a sharper throttle response and disables the stop/start function. Eco has a slower throttle response and will invoke stop/start more readily. Neither suit me and my driving style. ACC: Eco. The Eco mode gives a smoother, less jerky, drive. If ACC slows the car due to traffic in front, once that clears it accelerates more gently in ECO than others. More comfortable in my view. Air Conditioning: ECO. Compared to Normal it reduces the output, most notably when stop/start is activated, so less load on the battery whilst the engine is not running. I usually leave the Clima in Auto mode along with this ECO selection. I set this up ages ago and I'm assuming the behaviours are the same following multiple s/w updates to Infotainment System and some other components, including the ECU. @pinkpanther correctly points out that car always starts in 'Normal' mode; I assume this is to do with WLTP certification. For example, if Sport mode were selected and remained selected for subsequent journeys the emissions and fuel consumption may be higher leading to complaints, blah blah blah. Lawyers covering their backsides I guess.

Up to my eyeballs at the moment - made a note and will get back to you in due course

Octy Mk4 stalling in traffic - MAJOR safety issue
Initially I used Normal, then started using Eco but found the throttle response a bit slow at times. Spent a while fiddling with the Individual settings and have settled on what I consider a good balance. Been using that for best part of three years now. As and when suits you, I'd be happy to share what I use if it'll help.

Octy Mk4 stalling in traffic - MAJOR safety issue
Just a thought. Are you using the Eco drive mode? If so, maybe try normal or sport.

Octy Mk4 stalling in traffic - MAJOR safety issue
Mine certainly doesn’t stall by itself; yes, it does if I’m clumsy with clutch/throttle timing but generally I find the engine management system clever enough to deal with most scenarios. Even at very low speeds such as a tight turn into a side road 2nd gear and gently raising the clutch will cause the revs to rise and the car accelerate after which a bit of throttle and we’re away. Sounds like there’s a tweak of some sort needed on your car to solve the stalling.
