The relevant point being what, if any, difference does going from 20 grade to 30 grade at 100C make to the hydrodynamic pressure in the mains, big ends and camshaft bearings?

@hubsandspokes1987 My immediate thought too. Easiest first check. Does the battery light come on when you switch the ignition on but don't start the engine?

TEMPERATURE PROBLEM
These are 2 separate components, and indeed do 2 different things. The sensor just measures the temperature (in the case of the engine coolant) and appears to be working correctly. A thermostat open and closes at preset temperatures to control the flow of working fluid through a radiator (which always cools the fluid although the radiator itself can be either a system cooler as here or a space heater like in your living room). I'd say that the dsg thermostat has failed full open. Given that "some guy on the internet" can tell this from your description, you've been to some hopeless garages!

Stop Start issues
Knowing that from the word go would have taken me straight to the starter inhibit switch. Best suggestion for now would be to try and start the engine with the selector in N and with it in P.

NO!! You should never fill a can over 10l capacity with petrol, and most garages won't let you because it breaks the Petroleum Regulations.

Diesel pump issue?
Well, if it's only on a cold engine that suggests failed glow plugs, but on a hot engine it suggests head gasket failure. So next checks are whether the coolant remains pressurised once the engine cools down after a run, the oil level rises or the water level falls.

Flashing Red Coolant Warning Light
Much more often the fault is with the level sensor, as I described. You can actually get this "overheating" fault on the first cold start of the day, so you're certainly not going to presume the engine is actually overheating.

Low coolant question
As others sort of say:- Top with known quantity of water to reservoir minimum (borrow a measuring jug out your kitchen if you have to). Now fill with overstrength OAT to somewhere near maximum.
