Yes, just cut the pink wire and tape over both ends.

Probably the module, not the switches, but see if the switches light up if the car's lights are switched on. That tests for unbroken earth connection to switch pack, if they do illuminate, very unlikely that both switches failed at same time. Message me with the VIN if you'd like me to check part number of motor module, without any door disassembly.

Try operating the windows by turning the key in driver's side door lock and holding it fully turned. (Start with locked car). Doors should all unlock and if you keep key fully turned, windows should start lowering together. That effectively bypasses the switches to test the motor itself.

Octavia Scout (2008) 2.0TDI Rear Brake disc size (PR Code 1KF)
260 x 12mm is the disc size for 1KF on Octy2 2008. Pads to suit have genuine part number 1K0698451G. Look at images of those and see if they match what you currently have fitted to the car.

There's actually another pair of VW specs visible on erWin if you make a login and then click on the Approved oils link on the homepage. VW 508 88, and VW509 99. There are currently 19 oils showing as approved to these, all SAE 5W-40. I know nothing more about them nor the reason they exist; but to set off speculation, the genuine VW one is called 'maxi performance'. Perhaps they've taken note of what George has been telling us? Go to a Skoda parts counter and ask, maybe? Doubt they're cheap.

The fan is twin speed, and the low speed function has failed. Common fault. Can be repairable with a large external resistor wired in, or more straightforwardly by fitting a new fan.

F222 is lock module on rear left door, 223 the other side. T11 connectors are at B pillars. Circled numbers 76, 77 go to BCM inputs. All other circled numbers are earth points in looms (splices); or bolted earths to chassis metal. Look for broken wires or corrosion of connector contacts.

Dunno, but some of these sensors are active/polarised, I seem to remember. Experiment if you're keen.

One of them is black, yes? That came out of connector pin 1 (will be numbered somewhere, possibly wire entry side).
