Off road driving
Gen 4 and Gen 5 both advertise as being predictive. Wide open throttle or large torque demand with steering lock on etc should engage the rear wheels before slip is detected or certainly within a few degrees of slip. This is a good video in slow motion of haldex 5. The rears are driving and back end squatting with hardly any noticeable front wheel slip.

Xenon light intensity
Not sure about too bright but I've owned Xenons on other Skoda's, Honda and Jaguar and LED on Seat and Audi. Dipped beam is amongst the best although later Skoda's offered some adjustability of the AFS. High beam on the facelift Yeti is easily the best of any car I've had (Factory fit) . The combination of the bi-xenon on high beam and the additional halogen units is just amazing.

New Yeti Owner ... couple of questions on lighting ...
Agree with the fog light comment but some cars do confuse, In my wife's Mk1 Fabia vrs we were flashed many times and pulled over twice. Explaining to the police the fog lights are DRL's got some confused looks and some checking of switches.

I do find Xenons and LED although brighter are better in fog due to the sharp cut off, you don't get the light scatter that you get with halogen.

New Yeti Owner ... couple of questions on lighting ...
My headlight switch stay in "Auto" 99.999% of the time. The odd time in fog I may decide to override it but the system is clever enough to be right most of the time in my opinion.

Advice on Yeti please before i buy.
I currently have a 2017 2.0TDi 150 4x4 DSG L&K with 22k miles so fairly similar. Yours should have had haldex service last year so check it's been done. Cambelt and waterpump will be next year so budget for that it's £600 at Skoda + Service cost.

Advice on Yeti please before i buy.
Having owned 3 yetis, ran another for a few months and driven several. Petrol/diesel, auto/manual. The 2.0Tdi 150 DSG is the best model. Caravan wise, 2100kg max tow, 1585kg kerbweight (Actual 1640kg on weighbridge) so comfortable towing upto 1600kg in my opinion. (I tow 1500kg) Make sure cambelt and waterpump done on 5 year service, make sure DSG serviced every 40k miles and make sure haldex serviced every 3 years (Including cleaning pump mesh).

Kph -Mph. Again
I did mine with OBDEleven, took a few minutes.

Service changes needed at 80k miles
The cambelt and water pump is labour intensive and requires a coolant change. For this Skoda will charge £600+ and an independent around £450 to £550 including parts.

Service changes needed at 80k miles
DSG is short for Direktschaltgetriebe or Direct Shift Gearbox. VW's name for it's dual clutch automatic gearbox. Some variants of this require an oil change every 40k miles. If yours is a manual you don't need it.

Yeti spare wheel coversion
If you have adblue ensure you get the correct kit as the right hand foam insert is different. And be prepared for your bag hooks to become useless when the floor is raised.

15 or 16 inch wheels for ride comfort?
The OP is looking for optimum ride quality and considering SE, SEL or Monte Carlo. Surely the biggest issue here is the sports suspension on the Monte. Makes the ride much firmer around town.

Firm seats
The seating position is widely adjustable in the Yeti and you can struggle at first to get that sweet spot. In my view lumbar support is a must, we've had two Yeti's without and one with, it makes a big difference.

Whot no CD player
Depends how fast your PC is and what software you use. Ripping a CD takes a couple of minutes max. Hardly a chore when I buy a new one.

Amazon HD Music is now included with Prime Music and no extra charge so you can have CD quality or Hi-Res quality at no extra charge. You'd better have a decent data plan if you want that quality while driving though.
